I have a question i need answered quickly if possible and not alot of time to search through the forum. I have done tons of BB ribs but am about to do some spares 4 lbs a piece for the first time. I will be putting them on tonight and need them done inbetween 6-7 am as we are leaving for a 3 hour trip where we will be eating. They are fresh not injected can anyone give me a good ideal how long this will take at 225. Im thinking about putting them on at 1000 pm that would give them 8 hours but dont want them getting done at 4 am either. Thanks for the help.

To each is own, but ribs are so thin, why try to get something "inside"

As for time to let the rub set, I do my rub no more than an hour prior

At home, we rub, smoke, eat, no sauce. SBR sauce is popular, but it's just too thick and sweat for me.

If you want flavor, do a marinade or brine, some people do their ribs that way, just not me.

I keep ribs pretty basic.

Do what you're doing, but layer more flavors on the outside. AJ is mostly water, so won't carry a lot of flavor. Sprinkle more rub on the outside about 1/2 way through or after you spray, as some of the rub tends to cook out and reduces flavor somewhat.
