I am currently getting my ribs from sams. IBP cryovac three per pack. Price is right at $1.77lb. My problem is that the ribs are not very consistent. My last smoke was two ribs at 3.25 lbs and one at 2.75lbs(whole brisket bone off) all out of the same pack. The loinbacks I have done in the past seem to have been a lot closer in size. My question is when you buy by the IBP loinbacks by the case are they fairly close in size? I am considering purchasing a case from sams in the near future. I went in last Sat before superbowl Sun and they were out of loinbacks!! Had to buy spares, came out ok but had to pull them at diff times due to weight differences. What size should I look for? I also like IBPs from Sam's,but now that they are part of Tyson foods they will probably start adding their famous 10%-20% salt water.

Yes,I find wide variations in size and weight of spares in the cryopacs.

There is still a variation in loinbacks,maybe slightly less.

Smokin' will remind us constantly to weigh the slabs,as there can be wide variations in cooking times.

You have found this out and have come up with the answer.Different pull times.

I buy my spares at sams also. Have run into the same problems you guys are experiencing but i have to admit for the price the quality of the meat is pretty good.

Can't help you on the baby backs though as I never cook those, seem to be out of my price league for what you get.

I have talked to the meat manager at my sams when I have experienced this kind of problem and maybe if we all started talking to them they would help us out some.

I normally cut each slab into two roughly equal pieces. This makes them easier to handle (still do my ribs on a ceramic), and I haven't had a problem with them all getting done about the same time.

If it is a problem, cut the slabs into pieces of generally equal size ribs. Select the size you want to cook today, then vacuum pack and freeze the others for another time.
