I've always wanted to try converting spare ribs into St. Louis ribs, so after watching a video on YouTube, I gave it a shot. I purchased some spare ribs on sale this weekend and trimmed them into St. Louis ribs. It was a lot easier than I thought and based on the lower price of spares, I'll do it a lot more often! I smoked them for six hours on my 009 using 3 ounces of hickory and a carmel-ginger rub I made from a cook book (onion powder, salt, dry mustard, cinnamon, ginger, brown sugar). They turned out great!
