I smoked these for the first time this weekend and i have to say i might never go back to loinbacks. We had a nice sale on the whole slab ribs, I read Smokin's tutorial and trimmed the whole slab down to the st louis style. It is very easy to do, the pictures on the 101 explain perfectly how to do it, it was my first time trimming them down, but with a good knife it took me less than 30 minutes to trim down 3 slabs, which when you consider the savings is WELL worth the time. Rubbed them down put them in at 225 with a little applewood and 4:30 mins later(after the toothpick test) we sat down to incredibly moist and flavorful ribs. in my opinion this style of ribs just has better flavor and the fat content seemed to produce a better rib. If you never have given them a shot, I highly recommend you do it!
