I wasn't sure if it would work or not, but I smoked about 2.5 pounds of stew meat in my 025 this weekend. I first cut them into 1" x 1" cubes and seasoned with Cookshacks brisket rub. Placed them on my frog mats and smoked with about 2.5 oz of hickory for 2 hours at 225 degrees. I tested a few pieces and they were cooked all the way through but not tender. I knew boiling them in my stew would get them the rest of the way. I simmered them for about 2 more hours in a broth containing onion, celery, carrots, and garlic for 2 more hours.. My beef stew was delicious and the smoke was present but not over powered by smoke. It was a success. Give it a try for stew, chili, or anything else that takes stew meat in your recipe's.
