I've now done 6 Briskets. All overdone. Tried Dry Rub only. Wet & Dry. Injected and Dry Rub. Injected, Dry Rub and water tray. Nothing seems to work. Adjusted Temp down to 220. Still swings from 204-238. Have done ribs and they've come out great. I also get a lot of ash (pellets) on the bottom of the smoker. Contacted Cookshack after the first smoke and they stated I should use a shop vac and clean the smoke box each time, which I've done. Becoming very frustrated over the over done Brisket. Help. I don't want to return the unit, but if I can't turn our better Brisket than my off-set smoker, I have to go back.

As far as the temp swings go it looks like you may be experiencing some back draft issues.That can cause some swings.With that being said you should still be able to cook a brisket. Our older ovens had a manual control with 40 deg up or down swings with no effect on the results. Give me a call here at Cookshack and we can do some trouble shooting to see what may be going on. Hey, when I got mine I went through a bunch of Briskets. To the point that I had settled on the idea that I would use my stick burner for briskets at comps. I asked questions here and at comps and came up with a technique that works for me. Its a continues process of improvement and suprises. Try doing this, cook at 230 til internal is 160. Then wrap it in foil with a little red sauce. Cook til 190 then pull it and rest it. Check it with a probe to see how it feels for you to see if its tender. Good Luck
Your talking to the pro's so I don't have too much to add. I will tell you that I've cooked three briskets in my life and two have been on the FEC100. Both of those came out great and very moist. I cook for 6 hours @ 170* and then bump to 240* until finished, no foil except when it's off the cooker. I get some temp swings too, but it really hasn't effected any of my cooks.

Are you cooking the same amount of time as you did on your stick burner? Maybe you just need to start fresh with the approaches outlined here.
