Here is the way I handled 4 butts for 25 people over the 4th of july. Not wanting to stay up all night cooking the butts . I put the rubbed butts in the water smoker the morning of the 5th, cooked them at about 240 for 9 hrs, at that point they were at 155 degrees. I let them cool slightly and than wraped them in tinfoil and placed them on blocks of ice in a ice chest and put crushed ice around them.
The dinner was at 6 o clock, at 10 o clock on the morning on the 6 th. I took the 4 butts out of the ice chest opened the tin foil wrap and poured 1/2 cup of a mixture of apple juice and honey over the butts and resealed them.
I then put them in an electric roaster at 240 degrees until 5:00 at that time they were at 209 degrees a little to well done for slicing. But this did not seem to matter. Everyone thought they were very good.
I would also like to mention that the internal temp of the butts when I took them out of the ice chest was 36 degrees.
I was happy with a comment from one person beings this was the first time I had cooked for so many people. She said that she was from South Carolina and that people were really into bbqing out there and my butts were as good as any she had ever eating.
