Hi All,
great forum & I'm learning lots & LOTS! I have a question concerning Ribs. I plan on Cooking for a group of people & doin' Baby Backs for about 30 people. I plan on cooking 9 (1/2) racks at a time in a Smokette 3 times a day for 3 days with the event on the fourth day. My question is, could I refrigerate these after cooling & warm them on a grill on the fourth day or do I have to Freeze them? I would rather avoid freezing & thawing if I could. Thanks for your expertise on this matter.

Do you have any ribs racks, you could cut the # of days down, some of the WSM RR's will fit I think?

9 x .5 x 3 x 3 = 40.5 racks or about 1.5 racks per person????

You got some hungry eaters.

I would take them out and get them cold QUICK. Double wrap in restaurant quality plastic wrap (not the store stuff, but the stuff you can get at Sam's), then foil. 4 days is about the limit without freezing.

Yeah, Hungry eaters alright! My son and a few of his close friends ie High School Football team. Them Boys can & will put a hurt on them Ribs!
I will cook them using Ribs hooks from CS & can manage 9 half racks per load in the Smokette & plan on doing 3 loads per day staring on Wednesday, Finishing Friday evening & then serving them up on Saturday @ Noon.

I had GREAT luck with cooking a little underdone(and I mean a little) then throwing them on a cookie sheet for a quick trip to the freezer. After they had cooled down, packed in good vac seal bags. Suck the air out - freezer time!

Thawed and re-heated on a charcoal grill with sauce (or not) of your choice.

There were eating them faster than I could heat them.
