I missed that,but it is pretty common to either oven cook,or in the smoker.
I'd look for a traditional twice baked potato recipe and adapt it.
Putting the shell back in a hot oven,brushed inside and out with butter/bacon grease will crisp up the shell before stuffing.
Remove the potato,mix with your meat/seafood/vegetables/cheese/butter/ranch dressing,etc and stuff the shells.
Then smoke at your hot temp,until warm through.
