I know this isn't exactly a smoking topic, but I am using my smoked ham bone. I am making Old School Ham Bone Beans from an great blog called Deep South Dish. The recipe calls for Cajun seasoning like Slap Ya Mama.

Anyone know what I can substitute as I don't have Cajun Seasoning but have just about everything else, incl. many rubs.

Vicki, any chance you could post that recipe? I just carved the ham (you walked me through) and now I need to find something to do with the ham bone. Thanks in advance.

I've got a bone in the freezer and saved it just for this reason. Just didn't know how I was gonna do it.

I know it's too late for the Cajun Seasoning, but try this next time. I use the first one.

Vipers Basic Cajun Dust

"Mild"
1 TBS Butcher pepper
1 TBS Granulated Garlic
1 tsp Kosher salt
1 TBS Onion powder
1 TBS Spanish Paprika
1 tsp Habenaro powder
1 TBS Red pepper seeds
1 TBS Parsley

Mix and grind to powder. Seal in air tight container.

"Hot" Cajun Dust
Additive #1 Add 1 1/2 tsp of Additive #1 to basic Cajun Dust for "Hot" Cajun Dust

1 TBS Habenaro Powder
2 TBS Red Pepper Seeds.

Mix and grind and seal in air tight container.Mark additive 1 hot


"Vipers Cajun Death Dust"
Additive #2 For Extremely Hot or "Vipers Cajun Death Dust" add 2 tsp or more to basic dust.

1 TBS Habenero Powder
2 TBS Red Pepper seeds
1 TBS Ghost pepper Powder

Mix and grind and seal in air tight container.Mark additive 2 Extreme Danger!
