I call it veggie stew, Use a can of diced tomatos, brocolli, green beans, corn, onions, really anything. Most of the time I clean out the fridge and chunk it in. Olive oil on a pan, cover and simmer. Oregano, garlic, basil and goya adobo are the spices. Theres never left overs. I may try smoking them this weekend.
Pretty much the same as Mom's succotash.
