Every year for Super Bowl we do a pot luck. Everyone brings a dish, and we have a ton of food.

Well, for 27 years I've been doing baby back ribs, and everyone loves them. I constantly get reminders to do the ribs. Well. These folks are in for an upgrade this year, and they don't even know it. Thank you Cookshack.

I'm planning on doing half sauced and half dry rub only. I'll incorporate the sweet, spicy into that. I do six racks and cut them into individual or double ribs before placing them into a large warmer.

I would prefer to do them all dry(done them wet in the past) and have sauces on the side like you suggest, but I'm a little concerned. We keep them in a warmer all afternoon because we graze all day. Like I said, there's a ton of food, and people just constantly nibble. Since they sit so long in the warmer, I'm worried about them drying out without something on them helping to keep them moist. Any thoughts?

Sauce or no sauce won't help that. It' will help the "perceived" dryness, but the key is keeping them covers at a low temp (a warmer) or just room temp?

Keeping the sauce warm would help them get a better taste I would think.
SmokinOkie, you got me thinking about the sauces. I was planning on using my Cookshack sauce for my catering gig. But I may want a sweet or hot sauce. I have seen the sauce section in this forum before, but it's too overwhelming. Can you provide me with a simple sweet and hot sauce?

Just doctor up what you have. If you don't have the CS Spicy (shame on you) then just add some honey or syrup to the sauce to make sweat. To make heat, there are lots of options from simple pepper flakes, to hot sauces, etc. You'll have to experiment.

Not sure I have one to give you quickly for this weekend, you might not have all the supplies.

Maybe someone will jump in with an option.
