Andy, just curious, What did you think of the fat profile? I'm really noticing the butteryness of the Tamworth fat. It seems to melt at lower temperatures, as well as in your mouth.
Yes, they are the bacon pigs. It is because they have long deep sides. The boar belly was over 3 inches thick in some areas without the skin and weighted 19/17 pounds each. Like I said, the plant cured the bacon, so it's vacuum brined, not dry cured like we make ourselves.
