I'm doing my first butts, 2 at 9 lbs. I have a polder in one and a maverick in the other. They were tracking to the same temperature until I opened my 008 to swap the racks at mid-cook. The polder dropped from 161* to 159* and has stayed there for 2 1/2 hours. The maverick now shows up to 178*. It seems right since at this point they have been in for 14 hours. Does this mean the polder has croaked??? Any ideas???

Thanks. It's 3 hours since I posted the question and it still hasn't moved and the other butt is now up to 190. That makes it 5 1/2 hours without moving 1 degree. I'll try to pull it out and move it to see if it is in a fat pocket or against the bone. If it's against the bone, wouldn't it show a false high temp?

You were soooo right. removed the 1st butt at 195 and it fell off the bone. Put that probe into the 2nd butt and it registered the same low temp. Increased the oo8 to 250* and it's now up to 177* at 19 hours. Two totally different pieces of meat in the same bag. It look like it will end up at about 2 1/2 hours a pound.
