To help with temp stabilization, try placing a brick or two in the smoker. As they tend to hold the temp and radiate it evenly throughout the cooking process. Large floor tiles also do the trick.
That will do the trick. It will also slow the cooker down when it comes to reaching temp, but once it gets there it does help retain a constant temperature.
I don't know why I didn't think of that, myself. I keep a large pizza stone in my home oven at all times for that very reason. Whenever I open the door, the stone retains the heat and prevents major drops in temperature in the time it takes before I close the door again.
