Hi, just purchased a new model 55, I am breaking it in. Followed directions when setting the thermostat at 200 degrees, the temperature range is from 180 degrees to 260 degrees is this normal?

both of my sm150s do the same thing when empty.when loaded to at least half full you should notice that about 3 hours into the cook your temp swings will moderate to about 5-10 degrees either side.

People tend to worry too much about temperature swings with the CS. If you graphed it out you would find that the AVERAGE is just about where you set the temperature.

picnics are a great choice. they are very forgiving and for my money stay juicier than butts plus they just taste good!!!!!
