Got my smokette yesterday, and by 9pm I had my 1st picnic smoking away. It was 8.5 pounds.

Prior to cooking I slathered it in mustard and CS rub. Used 3 oz of hickory and 1 ounce of apple.

Cooked it for 16 hours at 225... yes, 16 hours and it only came to 182 degrees. I moved it into my oven for 20 minutes at 350 and that finished it up to 190 - 192.

I let it rest for 15 minutes and then started pulling it. I have NEVER pulled pork so easily before. It just about shredded itself.

The big test was my wife. I have ALWAYS thought I made good pulled pork but she never agreed. Today her comment was " You should never have made this". When I asked why, she said " because it's so good I think I'll eat way too much of it". She just ate it plain, no sauce, no bun.

Then my pork hating father in law came over. I saw him take a little taste as I walked outside to put up decorations. Came back in 20 minutes later and he had eaten 2 sandwiches.... with ketchup! Oh well, at least he must have liked the pork!

All I can say is that this thing was amazing. When you make your best pork ever on your first cook, well, what more needs to be said?

With ketchup! There should be a law against that, (or is there?) Try it with Smokin Oakies Mop Sauce ! Just when you thought it could'nt get better....Try the mop sauce, you will be glad you did. Enjoy.
