Smokin',while on his pilgrimage to Texas,recommended the Texas Rib Ranger's restaurant in Denton ,Texas.

Barb & Bill Milroy are legends on the circuit and were gracious enough to share this technique last year.

I'm not necessarily advocating this,especially in a Cookshack,but an amazing amount of competition teams use a method very close to this.
