Am cooking the Stampede in Dallas this weekend and using a FEC100. New cook on this equipment. Did spare ribs the other night for practice and they cooked in 4.5 hours. This is not normal. In the past on webbers and stick burners needed 7 hours. Was this abnormal or what? Heated FE and then placed ribs on top and next shelf. Set temp at 275 for 1 hour and then 225 for the rest of the cook. Used Candies apple pellets. Any comments or suggestions.

ps. I will probably be the only pellet head among the 100 plus cooks.
