Just got done putting up two gallons of sauerkraut and one gallon of kimchi when, I thought I would take a break and look at the forum. Wow, what a wonderful May Day. Thanks to everyone at Cookshack for the unbelievable gift. Will post some pics ( having trouble doing that) when it is setting alongside the A/Q. If I get every thing going at the same time, I will have to watch out for the smoke jumpers landing on my roof.

Cal, you know there will be some dim sum chicken trotters trekking through that new smoker.
Padrefan98, if your wife makes kimchi, you know how well it compliments BBQ. I make a very mild one for my wife with just a hint of heat and a sweat breaker for myself. In my opinion, both are a perfect match made in heaven for BBQ of any kind by replacing coleslaw. What was thought at one time to be good coleslaw is just ho-hum now.

Good for you Mr. T. a big congrats!!! You are gonna feel like its your birthday when that thing arrives!

Would you please share the recipe for Kimchi, the mild one. My hubby travels internationally and has it all the time in Korea (spicy of course). I haven't had it since an old friends mom used to make it back in the late 80's.

A couple years back I saw a special on Korea. I would love to get my hands on one of those antique old Kimchi pots they use in Korea. Very expensive to ship though (they would make a nice decoration for the home, etc.)
