It pays off to read this forum! I've had my 009 since late April and have smoked 16 batches of various meats. I had smoked ribs twice and just wasn't satsifed with the results--they were OK, just not great. After reading similar posts, I decided to keep them in longer. I had been smoking ribs for four hours, but today went 5 and a half. The meat was pulling back from the bones and was much more tender than earlier efforts. It DOES pay to read this forum and keep good notes.

The happy 009 filled with 4 racks of baby backs.
