My turkeys have been ok following the instructions for my smoker.

This time I deviated and just pulled out the BEST smoked turkey ever.

Here is what I did:

12-14# bird
clean and dry
spray with olive oil
season with Chicken Rub
PLACE BREAST SIDE DOWN IN THE SMOKER
COOK AT ONLY 180 FOR 11-12 HOURS

Not the most photogenic presentation but the results were spectacular. MOIST AND TENDER

I have the Smokette. Have had it for about 3 years... I know about the high temp because of the fat content.. I believe that breast side down allowed all of the fat along the back to baste the breast for that length of time. Good luck..

By the way it was a cold day too.... High of only 38 degrees.
