Okay, I know from experience that I can lay a piece of wood, on its side in my cs020, by the outside edges and on a short smoke it will only char. Now I'm thinking I can use that wood for future low Temp smoking.

My thoughts are after it is charred there is still smoke that may ignite at lower temps. Does this sound right???

Not that I plan on smoking cheese, but it has crossed my mind.

the problem wouldn't be the char, it would be the size of the chunks. Chunks don't smoke well at low temp, I'm also not sure how much wood flavor is left.

Wood chunks are cheap, always use new.

For cheese, go with chips, sawdust or pellets, they'll ignite at a lower temp because of their size.
