I have two butts to smoke. I want to serve them tomorrow at around noon. They are about 6.75 punds each. If I smoke at 225, approximately how long will they take?
Hey Dave, two 8lb butts take me about 18 hours at 225. I would say about 16 hours to be safe. So put them in about 8 p.m. tonight. If they end up getting done a little early you can always wrap them in foil and towels and place in a cooler to keep them hot until you are ready to pull.
Actually, I just pulled out my notes. The last time I did two butts, the first one was done in 18 hours, the second was done in just over 19 hours (at 225). However, I had the top one directly over the bottom one and I never rotated them. If you rotate the shelves or offset the meat so they get more even heat, they should get done pretty much at the same time.
Based on that, I should probably start them about 6:00 p.m. and foil them when they hit 205. That ought to be about 10:30 or 11 tomorrow morning. If done a little earlier, they will hold.
I'd pull them a 195 wrap in foil and then a towel and put them in a cooler, for an hour or so. 205 sounds too much to me. But I'm sure someone else will help out.
My butts, reguardless of their weight seem to take 1.5 hours per pound, and I try to take them to a 195 internal.
Others on here say it takes them 2- 2.5 hours per pound.
Based on that. Whichever your time ends up being your times should be as follows:
1.5 hrs/lb = 10.13 hours
2 hrs/lb = 13.5 hours
2.5 hrs/ lb = 16.9 hours
So even if you planned for 2.5 hrs a pound and you reached the internal temp of 190 at the 10.13 hour mark. You could leave the butts in the smoker and take them up to 200 or 205. Pull them. Wrap them, and cooler them. You'd still be under that maximum of 6 hrs in the cooler I have read in here.
I'm betting they wont take 2.5 hours per pound. But then again, I'm only betting my .02 worth!
I wound up smoking them for 19 hours and pulled them at about 195. They could have used a little longer but I had 25 hungry people to feed and had to get to serving them.
