My question is, what are the best strengtheners to accompany smoked ribs. Is their a particular brand of beer or a cocktail that best lends itself to smoked pork.

I smoked ribs yesterday in my Smokette and they were terrific as always. Therefore I need to spend more time dabbling in the accompanyments. Any suggestions would be appreciated. Thanks.

Sides?

Obviously the basics are beer & wine. I'll vary both of those depending on the rub. And for us, the time of year matters.

For sides, a side of Smoked Beans is great. The slaw and potatoe salad are basics.

So, you already ate and drank before I answered.

What did you decide on?

I am looking at the liquid side. My favorite beer is Molson Canadian, but it seems a little heavy with the ribs. Also, I don't have a clue as to what wines or other beverages might enhance the flavor of ribs.

As far as other side dishes go, it goes without saying that bake beans are necessary. I also like a combination of blackeyed peas and okra.

with the problem of what beers are available where, my suggestion -- Home Brew. You can find one and get the taste that you want.

Personally I like a variety of the Amber Beers with my ribs. But mine are a little bit spicier than sweet.

We just completed our meal with loin back ribs, bourbon barbecue beans and KFC cole slaw (I was lazy tonight). My wife and I tried the amber beer (Dos Equis) with the ribs and it was very good. The next time I believe we will try Merlot. I still would appreciate other opinions on liquid refreshments. That way I will have an excuse to keep smoking the ribs and sampling various strengtheners.
