to mop or not | Cookshack

hi all, when doing a butt in a cookshack, is it necessery to mop? I know that the cookshack has a very moist environment. I get good bark without the mop so far, but will this change if I do use a mop? Is the flavor much more evident? So do I need a mop or is it overkill? Thanks for your input.

Just my $0.02 worth; IMO a mop is of little value unsless you are dissatisfied with your usual outcome. Each time you open the door you will loose 30-45 minutes minimum on an already long cook time. You'll have to judge for yourself whether or not it's worth it. In my experience, I am satisfied - no, make that extremely pleased - with the flavor I get without mopping.

BTW - We did an 8 1/2 brisket and 2 racks of B'backs this weekend. Our guests ranted on how good the BBQ was. When we told them how easy it was to cook without tending a fire they were amazed! Cookshack has one serious looker and one wife who now knows what to get hubby for Christmas

It's a trade of in taste and time. If you like the taste, don't mess with it. If you want to try it, just remember to add time.
