Just my $0.02 worth; IMO a mop is of little value unsless you are dissatisfied with your usual outcome. Each time you open the door you will loose 30-45 minutes minimum on an already long cook time. You'll have to judge for yourself whether or not it's worth it. In my experience, I am satisfied - no, make that extremely pleased - with the flavor I get without mopping.

BTW - We did an 8 1/2 brisket and 2 racks of B'backs this weekend. Our guests ranted on how good the BBQ was. When we told them how easy it was to cook without tending a fire they were amazed! Cookshack has one serious looker and one wife who now knows what to get hubby for Christmas Big Grin
