Bought this boneless chuck roll (or roast) on special at $1.77 a pound. Well marbled, but not real fatty. After cooking a pork butt all night, threw this well seasoned 3.5 pounder in at 8:00am for 7 hours, plus 2 more wrapped in foil. Didn't even bother monotoring the temp. Took it out, pulled it apart, and crafted beef soft taco's with a little chopped onion and cilantro with hot sauce that rival any I've ever made. It was a fun and inexpensive alternative to pork. Lucky for me I already had 10 pounds of pork from the overnight cook.....

You sir, are a man of superior intellect and remarkable timing. I was just going down to find something for dinner when I saw your post. Realizing that I had an onion already chopped in the fridge, along with a bunch of cilantro and a bag of soft tortillas, I scurried down and got busy. I also threw some diced tomato and shredded montery jack in too just for color. Now, four soft tacos later, I am happy and full. Your post was pure genius!
