yes, goes on till next saturday, comeon up for some Q. I called CS and they said that it is probably the humidity, but what to do about it. Throwing it on the grill won't work, they suggested opening the door during the cooking cycle to let more moisture out. I guess I will try experimenting.
That's about all you can do. Of course, your timing will be screwed up. That's a big load! Maybe a slower cook to allow the "layers" to evap? Or, does that sound stupid?

Boy, do I wish I could come up. Haven't been that way for years! I love the Tanana Valley Fair. It focuses (or used to) on the agriculture and livestock, rather than the commercial crap. That's what I go to State Fairs for! The Kenai one starts ??? uh...soon? Can't seem to find out exactly when, and I've got things to enter! Cool

Yes, you have too much Humidity. Think about all the moisture in those butts, it's got to go somewhere.

I'd suggest you open up the door occassionally and let the steam out. Yes, it will add to the time, but if you're wanting bark, you HAVE to get rid of the moisture in the air in the CS.
