I'm sitting here letting a rib roast rest for another hour in my 009 and I need some help. I'm taking a turkey to the inlaws next week and I have 2 choices. We need to leave by 10-11 Thanksgiving day with a 2 hour drive.
1. Should I smoke it the night before, cool it, transport and reheat? If so I'm not sure how to reheat.
2. OR get up early and smoke it Thursday morning and transport it. If so, what suggestions do you guys have for transporting and reheating?
I did a trial run last week and after a 4 hr smoke I put it in a 500 oven to brown the skin and would like to do that when we get to the inlaws if possible.
