Brand new Amerique. 3rd cook today. Smoking some Dr Pepper and Jalapeño jerky at 200 * with some hickory. 1 minute into the cook the Cookshack thought the 6 hours had gone by and it said "done" and retreated to 140*. This has happened a few times now. Just unplugged it. Is there a way to cook with setting a time so as to bypass this? Or, is there a way to reset it? Thanks.

Hopefully electrotech or one of the other CS folks will see this tomorrow. If not, I'd call CS. In the meantime, I wonder if you could "trick" the controller by using the probe but leaving it outside the smoker? I'd think the smoker would just keep cooking at the set temp. Worth a try.

Glad it worked out for you! I think the upper limit on the probe set temp is because not many people want bbq done much over 200F. Some brisket cooks like 205 or so and so you'd have to use a separate IT thermometer. For me, 200 is ok for brisket and for pulled pork. Hope your jerky turned out good!
Do NOT use the probe unless you are cooking meat to a desired internal temp. The smoker has its own internal 'box' probe and it is tied into the controller. The probe should only be connected to the controller when cooking to an internal temp and the probe shoved into the meat. A LARGE cut of meat like butts, brisket, whole poultry/large breasts, etc.
It was just a short-term workaround when his box probe/controller was apparently not working. That seemed to work for him, certainly not a long term fix for his problem. I hope he got a fix from CS for his original problem.
I just don't understand why he was using a meat probe in the first place. All that did was force him to program the smoker for meat temp. Although I could be wrong.
So, to trick it, we used the meat probe and set it for 200 degrees and left it outside the unit. Cook worked perfectly. So, I appreciated the work around. Never heard from CS on the broader issue.

If the unit goes into hold after a short time in timer mode that is a good sign that the meat probe jack has a short. If you can call our tech support we can assist in trouble shooting the unit and get it fixed.

Understood. The way the control works is if it senses a probe connected it looks for a temp. In your case it thought there was a probe but it did not have a temp so it went into its fail safe or hold mode.

I suggest you call CookShack and speak directly to them. It will go much smoother and should get you up and smoking in short order.
