I used two gallons water, two cups salt, two cups sugar, and a few spices. Boiled the mixture and let it cool. Soaked the bird for (24) hours. The breast was still very moist four days later. FF
Sorry, Joe, I left out any directions. Sprinkle it all over with the lemon pepper, rub that in good. Get your smoker going like for chicken or ribs. Put the breast in and smoke maybe 30 min or so per lb. We don't wrap in foil. You could do that in the first 2 hrs. maybe. We use large breasts and they are usually fine as far as juice goes. I don't like it juicy though.
