I am like a kid with a new toy. I did a turkey breast tonight. Got a three pound Tyson turkey breast. I brined it over night with in a mixture of an eigth cup of salt, quarter cup of brown sugar, Herbs of Provence, onion, and pepper.
Next day I dried it, rubbed down with some citrus flavored grape oil and loaded on the John Henry Pecan spice. Cooked it five and a half hours at 225 with Apple wood to a probe temp of 165. It was amazing. Next to the ham, the best yet.
Served it up with some pepper jelly and roasted califower.
Break up a head of califlower into little florettes, put in a plastic bag with some olive oil, garlic powder and salt and pepper. Shake it up. Put it on a cookie sheet and roast in the oven for 25 minutes at 425. Great flavor and low calories. I have been losing some weight eating just veggies and meat. The Cali is a great substitute for potatoes.

No unfortunately, I was running late because the cook time was nearly six hours instead of about four and a half to five. I think the extension cord is dampening temps a bit. I have an electrician coming out Tues to install an outlet right next to the Smokette. I'll see how that works. Some cook times have been long. This time I kicked it to 245 for the last half hour to get it to 165.
