We're doing a whole 20# or so bird traditional style in the oven and smoking a whole turkey breast. Both brined in probably Smokin's Holiday Brine.

Haven't thought about smoking sides yet, but am planning on smoking some lamb wrapped in bacon appetisers. Last time I did them my bud said they were "delightful." Smiler He also damn near ate half of them.

Braised Brussel Sprouts

Most people are reluctant to try brussel sprouts but even the biggest skeptic i know loved this recipe.

2 lbs Brussel sprouts trimmed and cut in half
2 cups heavy cream
1 tsp salt (doesn't take much as parm. chz is salty)
fresh ground pepper
pinch of fresh ground nutmeg (optional)
1 cup grated parmasean cheese (a bit more if desired)


bring sprouts, cream and salt to a low boil over medium heat. occasionally shake pan and cook until a knife tip meets no resistance, 10 to 12 minutes. season with pepper, Pamasean and nutmeg if desired. I personally leave out the nutmeg.
Alright do to family spread all over the states we are having our dinner tomorrow. This is only my list of things to cook. Holly has her dishes and all the pot luck from all the other family members. I'm Smokin a ham shoulder, fring a turkey, bake beans and Mac & cheese on the charcoal grill, stuffed poppers and moinks, and deviled eggs. Smoking almonds today. Did I forget anything?? If anybodys around central Ar tomorrow stop in there should be plenty to eat. :-)
