I deep fryed a Turkey last Thanksgiving (2006) and strained and put the oil back in its container and kept it in our basement. Now a little over a year later is it still good, only cooked 1 Turkey in it, but it is a year old.

It is Gourmet Cooking Oil from Tractor Supply if that makes a difference.

I believe you will certainly be able to tell by the smell. Some/most nut oils will get rancid after a time. If it doesn't smell bad.. it's probably fine to use. The only reason, other than rancidity, that I know of would be if it wasn't properly strained.. it's the crispies that are left over that makes it go bad... least that's what I've read.
