Tame. We don't have many of the wild kind around here. What was yours?

I thought about ordering the Apple wild cure, but decided it might be too strong for store-bought birds. I ordered the teriyaki mix instead and it was on the way before you posted your technique. It's the flavor that was on the stuff I got at the meat market and my wife liked it a lot.

Was your jerky moist? That's one of the things we liked best about it. Thanks again for your recipe. Any other suggestions you might have?
