I'm looking to attempt turkey #2 shortly and I have a question about brining.
I purchased a 17 lb. Shady Brook Farms frozen turkey and I see that it contains "up to 8% basting solution". The ingredients for the basting solution include "turkey broth, salt, sugar and natural flavors."
Question: Should a bird, that has "up to 8% solution" already in it, be brined before smoking?
I'm assuming if I were to brine in one of Smokin's standard brine recipes, said bird would come out way too salty.
Any recommendations on how much salt to cut if I do brine it myself?
