turkeys went in at 5:45 rubbed with chicken rub and lawyers season salt at 250 deg at 8:00 I soaked cheese cloth in butter and balsamic @herb dipping oil, couple of oz per two sticks of butter,did this every hour till done ,glad I startd early the birds hit 160 at 2:30 and we ate at 3:30.the wild bird was first place in taste test,it finished one hour early so its not in the pic.
