I just recieved this recipe (see recipe below) via email from CS. Can someone please shed some more light on this method? Is it safe to assume that their cook time is WAY off because the additional mass of the water requires more energy to heat to 225*? How does the meat cook when it's partially submerged in 1/2 gal. of water? What is the texture of the meat like? Also, has anyone had good result with this (or any similar) recipe?
Two Fingers Honey Back Ribs
4 racks baby back ribs
1/3 cup Cookshack RibRub
1/2 gallon water
1/2 pint honey
1/2 cup Two Fingers tequila
1 cup (or more) honey
Rub cleaned baby back ribs with Cookshack RibRub
Place ribs in a pan which will fit in your smoker
Combine water, honey, and tequila and pour over ribs. Liquid should cover ribs halfway
Load ribs in smoker and smoke-cook at 225ºF for 90 minutes
Baste ribs with honey and continue cooking 2 hours or until done
