I have read some about uneven cooking temps when cooking large amounts on the FEC100 (full load of butts) I was wondering if it would be possible to install a small fan to circulate the heat like in a convection oven. Or maybe the fan would have an effect on the burner. I know some have said that they get around this by swapping the top and bottom racks during the cook which would work for me but Im a tinkerer

Cousin,

Don't try to overthink the FEC. It is an excellent smoker and needs to be learned how to be used just like any other smoker. Like shifting the grates of butts or putting larger butts in one and smaller ones in another area.

Keep in mind that there is already a fan in the smoker that drives the burn pot. And based on that, I think you already get a convection type of effect in the FEC as it is.

My best advice is to learn how to cook on the smoker as it comes to you before you try to make changes. I firmly believe the basics are the most important part of any smoker.
Do a search on fan, it's been discussed. The issue is putting ANY fan in an environment with smoke, grease, food. It won't last long.

Do you have an FE or just reading about it?

All smokers need to be mapped to understand temps and the only issue with a fully loaded one is just trying to get them all finished near the same time.
I have read about the FE for a while and have decided to get one. I looked at lots of other alternatives like Ole hickory and southern Pride but I am limited not only on space and weight but cash is also an issue. (Isnt it always?) I am looking to do a local flee market and I live near the Pocono raceway and have been a vender there in the past but not with Q. I also have a great roadside that will do well for me. This will be a part time thing for me. I have a large step van that has a 16 cargo area and this will make an excellent kitchen. The great feedback on this unit and the customer service comments has given me the confidence to go in this direction. Also no propane to hook up and from what Ive read the cost of pellets is not that bad also the different woods that are available.
