Just did a batch of Elk summer sausage. Wondering if my properly mixed, cured, smoked to 152 internal and vacuum packed summer sausage can survive a 4 day ups trip without shipping in cooler and dry ice. You see vac packed summer sausage hanging on a rack in the store. Roll Eyes Have done jerky and vac packed and sent to Iraq with no trouble. What's anyones thought??

If it was a Dry sausage and not a semi- dry, I'd say no problem.
Never tried it with my summer sausage before. I always err on the side of safety and keep even the vac- packed meat in the fridge until opening it. It just seems right.

Try this to be sure:

Prior to sending it why not vac- pac a stick. Throw it in your garage for 4 days, then open and give it a smell and a timid taste? If its nasty spit it out.
That would be better than finding out 5 days later when whoever you are sending it to calls you from the hospital.

Just a thought.
I was wondering about that.......if I'm not mistaken our service techs have done some work on his refrigeration in the past.

Thats not a bad price at all. Not if you figure time and cost to go out West to hunt one. And even then not be guarenteed. What does a 3yr old cow weigh? About 450- 500 on the hoof?
I have sent summer sausage from VA to CO and it arrived ok. Vacuum sealed it and froze it rock hard for a couple days in the freezer. I wrapped it in bubble wrap tne in newspaper. I placed everything in a cardboard box that was lined with styrofoam. I sent it priority early that day. It arrived still frozen. But, it was not the middle of summer. Hope this helps.
