Hi Joe...first of all, there's a BIG DIFFERENCE between vegans and vegetarians! The vegan lifestyle dictates that they not eat meat, poultry, fish, or dairy products like milk, eggs,gelatin etc. Nor should they wear fur or leather products. Vegetarians on the other hand often tend to "cheat" occaisionally (eg. chicken broth in their favorite soup dish or stir fried veggies), some are sticter than others. The one thing that I've learned in my catering business is that vegans, for some reason, seem to have a combative, surly "attitude" about their chosen diet. eg."Why don't I have the dietary choices that everyone else has??"
Two of our four kids have chosen the vegetarian diet (more or less) and that's ok with me but vegan isn't spoken here!
As far as a main course for your "veteranarian", I haven't a clue what to suggest other than going to your local library and checking out the Moosewood cookbook or several other vegetarian cookbooks that you will find there
