I am readyo try hi-mnt. kit. Has anyone used these smoking directions that come with it? I am using 12lbs. venison with 3lbs. of ground pork. Their directions are as follows.....120for 1 hr no smoke...140 1 hr smoke on.....160 3o mn. smoke on....180 until reaches 156... i plan on using 4 oz. of hickory. Does this sound about ball park or does anyone have a sure fire technique... I promised co-workers some on Mon.!!!!

dlucks: hi-mnt. makes some good products. follow their instructions the first time and add to it the next batch(pepper corn, mustard seeds, cheese)i do this in my 008, but do chubs about 8"long so not to get to close to the fire box. their summer sausage kit is good with deer & pork mix or just beef. like joe said, make sure your sticks are dry before you close the door.good luck to ya paul
well after 8 hrs it was at 157..took out and into an ice bath for 2omn.. let it get back to room temp. WOW!!!!! this turned out great for the first try...seemed like a long time its quick to get to 140 after that takes some time! hi-mnt was good as stated. Although next time i will add more garlic and pepper. I will definately be doing more of this in the near future!
