Once you have smoked the venison summer sausage where is the best place to keep it? Should I hang it out in my garage(it is round 40 degrees in my garage) or keep it in the frig?

I leave in fridge then vacuum seal and freeze what I don't expect to eat within a week or so of smoking.
How long should I leave them hanging to bloom? Can I leave them hanging in a 60 degree basement?
I let them bloom about 3 hours in my basement, which is about 65 degrees.
