one piece of advice ill give is get the biggest stuffer you can afford. I bought a LEM 5# and really wish i had a 20#. it gets real additive making great sausage and the batches keep getting bigger and bigger.

there is a book called great sausage recipes and meat curing by rytek kutas that tells all you need to know to get started. i have never made anything from it but it seems like a good place to start.
