I must be losing it. I went to Albertson's today to pick up some chickens to make beer can chicken using one of Buster's 4-can holders. All the chickens were 4 - 5 lbs. I asked for 3 lb. chickens and was told that ALL chickens sold in supermarkets weigh over 4 lbs. and always have. Am I losing my mind or didn't grocery store chickens used to weigh about 3 - 3.5 lbs?

Tried my first chicken yesterday. About a 4 to 4 1/2 lb. bird. That was the smallest I could find. Unless I went for a cornish game hine. Brined it for 10 hours then let it sit in the frig for 12 hours. Figured it would take about 3 to 4 hours to smoke-cook. One hour per pound at 225 degrees. Took better than 5 hours. I think a meat thermometor is a must. One of those digitals. One with a cable to go down through the vent hole so you don't have to open the door but can see the temperature. Next time I will be prepared
Chickens do seem supersized lately. Yesterday I smoked two chicken breast halves, both over 1 lb each. Almost 2 servings per half. Seems like a few years ago, one half was not anywhere near enough for one serving.

On the other hand, Saturday I had some excellent fried chicken at the Greyhound Tavern, Fort Mitchell, KY. Ate almost all of a half chicken along with half an order of delicious cheese stix. Anyhow, littler frying chickens must still be available, maybe just hard to find in grocery stores. 4 to 5 lb is mighty big if you want to serve half chickens.
