I'm trying to secure some casings and I want to make a couple of different types of sausage. I'll grind up a brisket (terrible I know), half for some great hamburgers on the FEC and the other half for some smoked beef Sausage. I'll defrost a little bit of the ground sirloin which I ground/froze last week and mix it with a ground porkbutt to make some Brats. I want to smoke them too. We'll see how much I get done.
