I tend to put things as high up as possible in my smokette. The more important issue, if you're going to fire up the smoker do a bunch of chickens. The leftovers are great in all sorts of things (enchilladas, caseroles, etc.). I make a point to make a lot extra, just to have the leftovers in the freezer for a quick meal. Throw them in a foodsaver bag and you're in business.
