Not sure if Cookshack has them..but I want to get a good remote thermometer and jerky rods, racks etc...anyone know of a quality thermometer I can use to thread into the smoker to keep an eye on temp without opening the door? Thanks, I know HiMtn has them, just am not sure if our good ole pals at CS do.

Hi, there are several thermometers that people here seem to use,you can get them on Amazon.com, I got mine from Allied-Kenco, they also have seafood racks available there as well as on the Cookshack website.
As for rods I went to the local welding supply and got some 3/16 and 1/4 inch stainless rods and cut them to length to slide in where the racks go and slightly point the one end so it will pierce the meat easier. You can also get these rods from Grainger or MSC in six foot lengths.
In a pinch I have even went to the hardware store and picked up some hardware cloth and laid on top of the exsisting racks.

In my opinion the best remote thermometer is the Nu-Temp 701. It can monitor three remote sensors at once, it has a long range, and no difficulty syncronizing with the base unit (some others do). They even have a new probe rated at 1200.

You can get one here, http://www.wirelessalarm.com/NU701.htm (select "BBQ Accessories"). They are $69.95. If you can wait until spring, Costco has had them in a set with a thermo fork for about $30.

For doing jerky, just buy bamboo skewers. Slide the jerky on and let it hang thru the rack.

Another really handy accessory is a few aluminum "disposable" grill racks. They're made of fine mesh expanded metal and come in a few different sizes and shapes. I've run them through the dishwasher about 20 times so far and not had to dispose of any.

Stogie has a picture of some of these on his web site.
I ended up just hitting Hi Mtn jerky's site and getting the probe thermo, a jerky rack and some of that tempting new seasoning the Inferno Blend for Super Bowl jerky.

I wish CS had more of an online catalog, as I would prefer to buy everything from them, however sometimes ecommerce is tough to get rolling.

Thanks for all the advice, I appreciate it, now I just have to figure out what in the heck to smoke for my RAIDER NATION buddies on Sunday.
