I like Alder.. but, I've also used oak and liked it as well. Alder was the preferred wood by the fish smokers in the fishing village I lived in for some years.

I agree with Wheelz.... I have never heard of using yellow pine for smoking. That is used for construction. Stick with hardwoods. Never and I emphasize never use pine of any type.
