Recently we discovered a recipe from the "Gunflint Lodge Cookbook". The Gunflint Lodge is located on the edge of the Boundry Waters Canoe Area Wilderness in Northern Minnesota and is known for its great food. This is no exception. Following is the recipe, which we just tried. It was terrific.
2 Tbs butter
1 cup carrots chopped
1 cup celery chopped
1 medium onion chopped
1/2 tsp. minced garlic(or more)
4 1/2 cups chicken stock or low-salt canned
1 (14 oz.) can whole tomatoes, chopped
2 cups cooked wild rice
1 - 1 1/2 Tbs. fresh tarragon or 1 tsp dried tarragon
white pepper and salt to taste
Julienned smoked chicken breast as desired.
We used two chicken breast with bone in and smoked them for one and one half hour in our CS. They were so good that we wanted to eat them before we made the soup. We used four chunks of apple wood to smoke them so that they would have a strong flavor.
This soup was very good. While we had the CS going, I also smoked up a baby back rib. I will now slow cook it in sour kraut in the slow cooker. We have gotten used to pork and kraut since we live 30 minutes from New Ulm, Mn.
If anyone else has any twists on this or other recipes or ideas, I would love to hear them.
